Our Heritage

The De Philippis Legacy

The Butcher Shop lineage began when Roberto De Philippis bought a Hawaiian restaurant in Chula Vista in 1968 and transformed it into a classic steakhouse. The De Philippis family, led by Vincent De Philippis and Madeleine Stefani, moved to San Diego in 1950 and opened Filippi's Cash and Carry, an Italian deli and grocery.

Their son Roberto founded The Butcher Shop, and by 1971, the Mission Valley location had quickly earned the nickname “San Diego's Sexy Steakhouse.” The current Kearny Mesa location has been serving guests since 1986.

Reminiscent of a classic Chicago-style steakhouse, The Butcher Shop features a warm, intimate atmosphere with rich dark wood paneling, comfortable leather booths, gleaming brass, and beautifully etched-glass panels.

1968

Hailing from Seattle, WA, Chef Brian Gist embarked on his culinary journey after graduating from the California Culinary Academy in San Francisco in 1993.

His career took him to esteemed locations including Salish Lodge at Snoqualmie Falls, La Costa Resort and Spa, and Flagship Cruises and Events before arriving in San Diego in 2000.

His remarkable journey has led him to the historic Butcher Shop Steakhouse in Kearny Mesa, where he continues to excel as head chef, captivating diners with his culinary prowess and creativity.
